Grilled Pork Burritos

  • 5 pounds boneless country-style pork ribs lean
  • 3 green bell peppers sliced
  • 2 large white onions sliced
  • 1 package dry burrito seasoning
  • 12 flour tortillas


  • 6 "burritos sized" 110 inch flour tortillas
  • 1 16-oz can refried beans, heated*
  • 1 cup cooked white rice, heated*
  • 1 cup mexican blend four cheese, shredded
  • 2 tablespoons fresh cilantro, chopped
  • lime wedges, for serving


  • 2 pounds fresh tomatillos, husks discarded, rinsed and patted dry 
  • 1jalapeno chile
  • 1 ripe avacado, pitted, peeled and chopped 
  • 2/3 cup white or yellow onion, chopped 
  • 1/3 cup cilantro leaves, packed 
  • 3 tablespoons extra virgin olive oil 
  • 3 cloves garlic 
  • 1/4 teaspoon kosker salt 
  • pinch of sugar

Slow cook country ribs on a barbecue for about 2 hours, until their internal temperature reaches 160 degrees F. Remove from heat and set aside.

Grill peppers and onions until slightly tender.

Cut ribs into bite site pieces, add to peppers and onions and mix with burrito seasoning plus 2/3 cup hot water.

Serve with warm flour tortillas.
