How to Make Bacon-Wrapped Pork Sausage with Pulled Pork

This simple yet delicious recipe highlights how well different types of pork complement one and another and how you can’t have too much pork.
Ingredients
- 12 pork sausages (we used a mix of spicy Italian and honey garlic)
- 1- 5 pound package of bacon (we used smoked maple syrup)
- 2-3 pounds of cooked pulled pork
- 1 cup of BBQ sauce
- Your choice of toppings- we went with pickles, mustard and chopped onions
Instructions
- Wrap 1 piece of bacon tightly around each sausage. Depending on the size of sausages you have, you can also double wrap them. Don’t use a wooden toothpick to secure the bacon, or anything else that would puncture the sausage casing, because all of the juices from your sausage will escape as you grill them. You want to retain as much of that juice to avoid your sausage being dry.
- Pre-heat your grill on medium-low to ~325ºF. Once at heat, place your bacon wrapped sausages over direct heat. Periodically check on them and flip/rotate to ensure you’re not getting any flare ups as the fat of the bacon renders down.
- While the sausages are cooking, heat it up in a skillet or cast iron pan. Then mix the pulled pork and BBQ sauce together and put the mixture in the pan to warm it up.
- When the internal temperature is at 165ºF, your bacon wrapped sausages are done and ready to come off the grill.
- Toast your buns over direct heat being careful not to burn them.
- Load each bun with a bacon wrapped sausage, pulled pork and whatever toppings you prefer. We did mustard, onion and pickle but be as creative as you like using anything from avocado to melted cheese to jalapenos. Most toppings go well with pork!
