What’s the difference between country-style ribs and regular ribs?
Country-style ribs are cut from the region where the pork loin meets the blade or shoulder of the animal.
This cut is sometimes referred to as “mini pork chops” while they have a bone in, they can also be boneless. They are tender and have a considerable about of meat.
“Regular ribs” is still a very broad category in pork that has sub categories of baby back ribs and spare ribs. Baby back ribs are true ribs and have a layer of meat around and between the bones.
They typically come in a rack and are best for grilling.
Spare ribs are true ribs as well, they have a flavorful layering of meat and fat between the bone.
We can almost guarantee you will get messy eating them! All ribs are flavorful, tender and will need extra napkins when eating.
What temperature should country style ribs be cooked to?
The USDA recommends that pork be cooked to a minimum internal temperature of 145 degrees F as measured with a food thermometer.
When preparing ribs it is common practice to have the internal meat temperature anywhere between 165-180 degrees F.
