Step Three: In the same skillet, cook the chorizo over medium-high heat until the pork is browned.

Step Four: Meanwhile, scramble the eggs in a separate skillet using medium-low heat, just until set.
Step Five: Next, warm the tortillas directly over the chorizo or in a dry skillet until warm and pliable.
Step Six: Fill each tortilla with potatoes, chorizo and eggs. Top with cheese and salsa as desired. Roll tightly and serve.

How to freeze chorizo breakfast burritos
Begin by allowing all burrito fillings to cool completely, then assemble the burritos and wrap them tightly. Individually wrap burritos in foil, parchment paper, or wax paper, then place them in a gallon-sized freezer bag. Freeze for up to 3 months.
Best way to reheat chorizo breakfast burritos from frozen
Remove the foil, parchment, or wax paper. Next, wrap the burrito loosely in a damp paper towel and microwave until heated through. Flip at one minute and continue heating for a total of two minutes. Time will vary. For a crisp exterior, finish in a skillet or air fryer.
Why does chorizo have a red tint?
The reddish tint of pork chorizo comes from the spices used to flavor it. Many versions of chorizo include paprika or red peppers like ancho chili peppers.
