The pork ribeye roast is from the rib area of the loin. This means it is more tender and flavorful than a center-cut pork loin roast.

Ingredients
To Make The Spice rub
- Brown sugar
- Garlic powder

- Pork ribeye roast
- Olive oil
- Garlic
- Yellow onion
- Red wine
- Chicken broth
- Rosemary
- Carrots
- Potatoes
- Balsamic vinegar
- Corn starch
- Bay leaves

How to cook a pork ribeye roast in the Instant Pot
Read the instructions thoroughly before starting the cooking process with your instant pot.
Make sure to make adjustments for your instant pot model.
Preparing the spice rub.

Mix together in a small bowl, brown sugar, garlic powder, onion powder, sea salt, ground cinnamon, dried thyme, ground pepper and dried oregano.
Stir the ingredients, breaking up any chunks and setting aside.
If preferred, trim fat from the pork ribeye roast.
Gently rub the spice mixture over all sides of the pork. Return the meat to a clean plate or platter.
Saute two tablespoons of olive oil in your Instant Pot.
Add sliced onions and chopped garlic cloves.
Cook for 2-3 minutes, then carefully remove the mixture from the instant pot and place it in a bowl for later use.
While still in saute mode, add the remaining olive oil to the instant pot.

Once the oil is hot, place the pork ribeye roast in the pressure cooker and sear each side for 2-3 minutes.
Brown all sides of the pork carefully, remove it from the instant pot, and set it on a plate.
Press cancel on your Instant Pot and deglaze it by adding the wine and broth.
Scrape all browned spice rub crumbs and mix into the wine/broth mixture.
Add the onion and garlic mixture (prepared earlier), fresh rosemary, and bay leaves to the wine/broth liquid.
Place the metal instant pot trivet on top.

Once the trivet is in place, rest the roast on top.
Replace the instant pot lid and turn the valve to seal. Set to manual high pressure for 70 minutes.
Upon the completion of the 70 minutes quick release the pressure and add in cut carrots and potatoes.
Replace the lid and set it to manual high pressure for 3 minutes of cooking.
Quick-release again. Remove the roast and vegetables and place them on a serving tray.
Discard the rosemary twigs and bay leaves.

Remove trivet from the instant pot. Slowly add corn starch into the measuring cup of balsamic vinegar.
Stir to incorporate and create a slurry.
Turn on the saute feature of the instant pot and pour in the vinegar and corn starch slurry.
Use a wire whisk to combine.
Continue to whisk thoroughly and cook for 3-4 minutes on the saute feature or until sauce thickens.
Serve the pork ribeye roast sliced and accompanied by the carrots and potatoes.
Scoop gravy from the instant pot and drizzle over the top for additional flavor.
How long to cook pork ribeye roast in the instant pot
Depending on the size (pounds) of the pork ribeye roast the cooking time will vary.

Juicy Instant Pot Pork Ribeye Roast

Ingredients
Spice Rub
- 2 tablespoons brown sugar packed
- ½ tablespoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon sea salt
- ½ teaspoon ground cinnamon
- 1 teaspoon dried thyme
- ½ teaspoon ground pepper
- ½ teaspoon dried oregano
Sauce and Vegetables
- 2 lb. pork ribeye roast
- ¼ cup olive oil divided
- 4 cloves garlic chopped
- ½ yellow onion sliced
- ½ cup dry red wine pinot noir
- 1 cup chicken broth low sodium
- 2 sprigs fresh rosemary
- 3 large carrots chopped into 1 inch chunks
- 2 large potatoes chopped into chunks
- ½ cup balsamic vinegar
- 2 tablespoons corn starch
- 2 bay leaves
Instructions
- Mix together all dry rub ingredients in a small bowl.
- Trim fat from the roast and rub spice mixture all over the pork and set aside.
- Press saute on Instant pot, add 2 tablespoons of olive oil followed by the onions and garlic.
- Cook for 2-3 minutes, then remove and put in a bowl for later use.
- While in saute mode, add remaining olive oil and pork to instant pot. Sear 2-3 minutes on each side to brown the pork. Remove the pork and set aside.
- Press cancel and deglaze instant pot by adding in the wine and broth, scrape spice crumbs into wine/both mixture.
- Add onion, garlic, fresh rosemary, and bay leaves to the liquid.
- Place the metal trivet in unit and rest roast on top. Replace instant pot lid and seal.
- Set to manual high pressure for 70 minutes.
- Quick release pressure, then add in the carrots and potatoes. Replace the lid and set to manual high pressure for 3 minutes.
- Quick release again, remove roast and veggies, and place them on a serving tray. Discard rosemary twigs and bay leaves.
- Remove trivet from instant pot. Slowly add corn stanch into measuring cup of balsamic vinegar. Stir to create a slurry.
- Turn on saute feature and whisk corn starch slurry into instant pot. Cook for 3-4 minutes or until the sauce thickens.
- Serve veggies and pork together with sauce drizzled on top.
