Ingredients
- 4 porterhouse (bone-in loin) pork chops (1/2- 3/4-inch thick), seasoned with salt and pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small white onion, chopped
- 2 cups rice, uncooked
- 4 plum tomatoes, chopped
- 2 medium jalapeno peppers, minced
- 1 cup beer (can substitute with water)
- 2 cups chicken broth
- Fresh cilantro, chopped

- We suggest thick, bone-in pork chops for this recipe, but boneless chops may also be substituted.

How to Make Baked Pork Chops and Rice
Heat oil in a large skillet. We like to use a cast iron skillet. Then add pork chops.
Sear pork on both sides on medium-high heat until brown, or about 1 minute on each side.
Remove from the skillet and cover loosely with foil.
Add garlic and onions to the skillet. Cook and stir until tender, or about 2 minutes. Scrape up brown bits from the bottom of the skillet.
Add rice, stirring constantly until rice begins to brown, about 3 to 4 minutes. Add tomatoes, jalapeños, beer and broth.
Bring to a boil and cover. Reduce heat to medium-low and simmer 10 minutes.
Place pork on top of rice; cover.
Simmer 6-8 minutes or until the internal temperature on a thermometer reads 145 degrees F.
Let stand 5 minutes before serving. Sprinkle with chopped cilantro if desired.
