Ingredients

- Pork cutlets: Look for tenderized pork cutlets. You can also use pork cutlets that are not tenderized for this recipe.
- Prosciutto – Or you can substitute with thinly sliced ham
- Swiss cheese
- Butter
- Flour
- Salt & Pepper
- Eggs
- Milk
- Panko crumbs
Recipe Tips
- Glass pie plates are the perfect size for flour and egg wash stations
- Dredge- a light coating of flour and other dry ingredients.
- Substitute thinly sliced ham in place of prosciutto
How to make Pork Cordon Bleu
Step 1: Place one slice of prosciutto (or thinly sliced ham) on each cutlet, then top with a half piece of Swiss cheese.

Step 2: Starting from one end, carefully roll each cutlet over the filling and tuck in the edges as you go. Secure with toothpicks, if needed, to keep the rolls from unrolling during cooking.

Step 3: Prepare the dredging stations. To help simplify this step, use two 9-inch glass pie pans and a deep plate for the dredging stations. This will keep the spillage to a minimum.
Flour: Mix all-purpose flour with 2 tsp. kosher salt and 1 tsp. black pepper.
Egg wash: In another dish, whisk together the eggs and milk.
Panko coating: In a third dish, place panko crumbs
Step 4: Lightly dredge each rolled pork cutlet in the flour mixture, shaking off any excess. Next, dip the floured cutlet into the egg wash, ensuring all sides are covered. Lastly, press it into the panko crumbs and turn to achieve an even coat.

Step 5: Preheat a large skillet over medium-high heat and melt 4 tablespoons of butter. Once the butter is melted, add the cutlets and cook until golden brown on all sides, about 2-3 minutes per side.

Step 6: Transfer the cutlets to a baking sheet lined with parchement paper into a 375 degree F oven. Continue to bake for 14-16 minutes, or until the pork reaches an internal temperature of 145 degrees F.
Step 7: Serve. Let the cutlets rest for 3-5 minutes before slicing.

What cut of pork should I use for Pork Cordon Bleu?
To make Pork Cordon Bleu, we suggest using a thinly cut pork cutlet that is tenderized. This cut of pork is similar to a pork chop, but is typically boneless and often pounded flat for quick cooking.
Should I bake or pan-fry Pork Cordon Bleu?
Both! To create a golden crust on the outer edges of the pork, this recipe uses both browning time in a large skillet and finishing in the oven. This approach gives the crunch to seal in the moisture and not dry out the pork by overcooking.
What is dredging?
Dredging is the first step in the coating process for the Pork Cordon Bleu. In this recipe, the pork cutlet is lightly coated with a mixture of flour, salt, and pepper. This helps prevent the pork from sticking to the pan, promotes browning, and, most importantly, prevents the pork from drying out as it cooks.
