- Chipotle sauce
- Black beans
- Frozen corn: Canned corn may be substituted for frozen corn
- Cheese: monterey jack, pepper jack, sharp cheddar: Use a combination of cheeses or whatever you have on hand.
- Topping options: cilantro, pickled red onions, jalapeno slices, sour cream, salsa

How to prepare Pulled Pork Nachos
This recipe is quick and easy, the longest step is waiting for the oven to warm. Preheat oven to 400 degrees F.
If using frozen corn, defrost in the microwave and drain off any excess liquid. Set aside.
In a large bowl, mix leftover pulled pork with the can of chipotle sauce. Stir to add sauce throughout, making sure all the meat is covered with sauce.

Grab a sheet pan and spread a single layer of tortilla chips over the sheet pan.
Next, add the toppings to the chips. Begin with the leftover pulled pork, then black beans, corn and finally the cheese. Sprinkle each variety of cheese around the top of the nachos.

Place the loaded nachos into the oven and bake for 10 minutes or until the cheeses have melted.

- 1 can black beans rinsed and drained
- 4 oz Monterey Jack cheese grated
- 4 oz Pepper Jack cheese
- 4 oz Sharp Cheddar cheese
