- Pork ribeye roast (boneless)
- Olive oil
- Yellow onion
- Apple
- Apple juice
- Spices: salt, pepper, dried thyme, dried rosemary, dried oregano, dried garlic, dried basil

How to slow cook a pork ribeye roast
Warm olive oil in a cast iron skillet or heavy-bottomed skillet.
The thicker based skillet will distribute heat from the stovetop more evenly than other pans.
As the oil heats, mix together salt, pepper, roast seasoning, thyme, rosemary, basil and oregano.
Rub this spice combination over all sides of the pork ribeye roast.
Toss any remaining spice rub into the warmed skillet.

Place the pork ribeye roast in the heated skillet and sear.
Each side will reach a golden brown in approximately 2-3 minutes.
Turn roast to allow each side to develop a crust, but not burn.
Searing the pork really deepens the flavors in the meat. You won’t regret adding this step!

Once the searing is complete, transfer the pork to the slow cooker for the remainder of the cooking process.
Prepare the slow cooker with layers of sliced apple and onion.
Dust the base layers in slow cooker with dried garlic and top with one cup of apple juice.

Place the pork ribeye roast on top of the layers in the slow cooker.
Add any remaining seasoned drippings from the skillet to the slow cooker as well.
Close the lid and cook for 2-3 hours on high or 5-6 hours on low setting.

For a 3lb. pork ribeye roast we suggest cooking 2-3 hours on high or 5-6 hours on the low setting.

The fresh apples will also release juices as they simmer in the slow cooker.
To ensure plenty of liquids are present, an additional cup of apple juice is added to the slow cooker to keep the pork from becoming dry.

- 1 tablespoon salt
- 1 teaspoon thyme dried
- 1 teaspoon rosemary dried

- 1 yellow onion thinly sliced
- 1 apple thinly sliced
- 1 cup apple juice
- ½ tablespoon pepper
