How to cook pork medallions
Cut tenderloin into 8 slices, about 1 ¼ inch wide each.
Place two slices of pork tenderloin side-by-side, wrap a slice of bacon around it, and secure it with a wooden pick.
Repeat with the remaining pork tenderloin slices and bacon.
Season the medallions with salt and pepper and spray lightly with cooking spray.
Broil or grill (see instructions for each below).
Broil – Preheat the broiler to 500F and broil the pork mignons about 4 inches from the heat source for 4-5 minutes on each side until the internal temperature is 145F. Rest for 3 minutes before enjoying.
Grill – Preheat grill to 400F. Place the pork mignons directly over high heat. Grill with the lid closed on each side for 4-5 minutes until the internal temperature is 145F. Rest for 3 minutes before enjoying.
