How to make cheesy potato casserole using leftover ham
Preheat oven to 375 degrees F.
Rinse 2 pounds of potatoes under cool water, peel, and cut into 1/2-inch cubes. This will yield five to six cups of chopped potatoes.
Add the potato cubes to a large sauce pan. Add water until the potatoes are covered with approximately an inch of water. Heat the water and potatoes to a boil, and let boil for 5 to 6 minutes. Drain the water and set the pot to the side.
Add drained potatoes and 2 cups of diced ham to a greased 9 x 13 baking dish. Mix in one cup of cheese and gently combine. Place the baking dish on a heat-safe surface.

In the same saucepan used to cook the potatoes, melt 4 tablespoons of butter over medium heat. Add in 1 cup of diced onion and the minced garlic. Stir occasionally and cook until the onions turn translucent, this will take around 3 minutes.
Stir in salt, pepper, smoked paprika, ground mustard, parsley, and flour until combined, creating a paste similar to a roux for the sauce. Reduce to low heat.


Slowly add in the milk and sour cream. Simmer for 3 to 5 minutes or until the mixture thickens to a gravy-like consistency. It is important to stir continually to keep from sticking to the bottom of the pan.
Carefully pour the warm sauce from the pan over the ham, potatoes and cheese in the 9×13 dish and stir making sure the sauce creates an even coating.
Cover baking dish with foil and bake in oven for 30 minutes at 375 degrees F. Remove foil and sprinkle remaining cup of cheese over the top, return to the oven for 10 more minutes.

Remove from the oven when the cheese is melted and the casserole is bubbling around the edges. If desired, garnish with fresh parsley, green onion, or chives.

Cheesy Ham and Potato Casserole
Ingredients
- 2 cups cubed ham diced into ½-inch cubes
- 2 lbs. Yukon Gold potatoes approx. 4 large potatoes, diced
- 1 medium yellow onion diced (about 1 cup)
- 3 cloves garlic minced
- 4 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- 2 tablespoons sour cream
- ¾ teaspoon salt
- ½ teaspoon pepper
- ¾ teaspoon smoked paprika
- ½ teaspoon ground mustard
- 1 teaspoon dried parsley
- 3 cups shredded cheese sharp cheddar, gouda, or mozzarella
Instructions
- Preheat oven to 375° F.
- Peel potatoes, cut into 1/2-inch cubes (approximately 6+ cups chopped potatoes). Pour the potatoes into a medium pot and fill with water.
- Bring to a boil; let boil for 5-6 minutes. Don’t let the potatoes get overly soft/tender; just slightly softened. Drain, set aside.
- Grease a 9x 13 inch or any 3–4-quart oven-safe baking dish. Add the drained potatoes, ham, and two cups of shredded cheese. Gently toss all together and set aside.
- In a saucepan used to cook the potatoes, melt the butter over medium heat. Add in the onion and garlic. Cook and stir occasionally until the onions are translucent, about 3 minutes.
- Stir in the salt, pepper, smoked paprika, ground mustard, parsley, and flour. Reduce to low heat.
- Slowly stir in the milk and sour cream. Simmer for 3-5 minutes, until it has thickened to a gravy consistency. Remove from the heat.
- Pour the warm sauce over the ham and potatoes and toss gently to coat.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle remaining cup of cheese on top, and return to the oven for 5-10 more minutes until the cheese is melted.
- Remove from the oven and garnish with fresh parsley, green onion, or chives, if desired.
