Kielbasa and Potato Soup
Cold weather and a warm, creamy bowl of potato soup. They go together hand in hand to help beat the winter blues. This easy soup with kielbasa is a straightforward recipe to throw together after a weekend of snow and frigid temperatures.
This recipe calls for two types of pork: Kielbasa or Polish Sausage and bacon. Smoky, with a hint of garlic, creamy potatoes, and cheese the ingredients come together like a cozy sweater and slippers at the end of the day.

- Bacon

How to cook cheesy kielbasa potato soup
Gather a large soup pot and warm over medium heat. Fry chopped bacon and kielbasa slices using medium heat until the bacon is golden brown and kielbasa is slightly crispy.


Using a slotted spoon, scoop the meat out of the pot and set to the side. Add carrots and celery into the soup pot and saute for 8 – 10 minutes, until tender.
Next, stir in onion, garlic, red pepper flakes and saute for one minute. This step will fill your kitchen with a delightfully fragrant aroma.
Pour chicken broth and one cup of milk into the pot and bring to a simmer over medium heat. Add in diced potatoes, cover with a lid, and simmer for additional 5-10 minutes until potatoes are tender.
As the soup simmers, whisk together the flour and remaining 1/2 cup of milk. Slowly pour into the soup to thicken the broth.

Return bacon and kielbasa into the pot and stir. Continue to simmer using low-medium heat for 10 minutes.
Stir in the cheese until it melts completely. Add salt and pepper to suit your personal taste and garnish with parsley before serving.

How to store leftovers
Store leftover soup in an air-tight container in the refrigerator for 3 to 5 days.
Since this is a milk based soup we do not suggest freezing leftovers. Separation of the milk and broth will occur and change the viscosity.

Kielbasa Potato Soup
Ingredients
- 5 slices bacon chopped
- 14 oz. package Kielbasa sliced
- 2 large carrots peeled, diced ( 1 1/3 cups)
- 2 ribs celery diced (1 cup)
- 3 cloves garlic minced
- 1 cup yellow onion diced
- ½ teaspoon red chili flakes optional
- 32- oz. container low-sodium chicken broth
- 1 ½ cups milk divided
- 1 lb. Yukon gold potatoes diced (2 1/2 cups)
- 3 Tablespoons flour
- 2 cups shredded cheddar cheese
- ½ cup shredded parmesan cheese
- ¼ cup parsley roughly chopped
- Salt and pepper to taste
Instructions
- Fry chopped bacon and kielbasa slices over medium heat until bacon is golden brown and kielbasa is slightly crispy.
