Taco Crock Pot Casserole
This simple slow-cooker taco recipe makes tacos for eight people at once. The best part? You don’t even have to cook the ground pork in another pan—it cooks in the slow cooker, too!

Ingredients
- Ground pork
- Salsa
- Red enchilada sauce
- Black beans
- Pinto beans
- Corn
- Mexican cheese
- Tortilla chips
- Spices: garlic powder, cumin, smoked paprika, chili powder, kosher salt

- Don’t open the lid while ground pork is cooking

How to make taco casserole in the crock pot
Spray the inside of a 6-quart crock pot with nonstick cooking spray and set to low.

Add ground pork to the crock pot along with garlic powder, cumin, smoked paprika, chili powder, and kosher salt. Stir to break the pork into small pieces and mix the ingredients thoroughly.

Pour salsa over the top of the spiced ground pork and cover with the lid. Cook for 4 hours on low or 2 hours on high.
Following the cooking of the ground pork remove the lid and stir to break meat into small pieces. Mix in enchilada sauce, beans, one cup of cheese and chips. Stir to combine.


Sprinkle the remaining 1/2 cup of cheese on top of the casserole and replace the lid. Increase the heat to high and cook for 15 to 30 minutes or until the cheese is melted.
Serve immediately and feel free to personalize it with your favorite toppings! We enjoy adding guacamole, sour cream, fresh lettuce, and zesty cilantro.

If you anticipate having leftover taco casserole, consider omitting the step of adding tortilla chips to the crockpot. This is purely a matter of personal preference and can enhance the texture of the casserole when reheating refrigerated leftovers.
Leftover servings may be stored in an airtight food-safe container and refrigerated for 3 days.
Make Ahead
To make this recipe ahead of time, follow the steps to cook taco meat in the crockpot, then pause the recipe. Allow the meat to cool, place it in an airtight container, and refrigerate.
When you’re ready to complete the recipe, place the cooked ground pork back into the crockpot and let it heat for approximately 30 minutes. After that, continue with the remaining steps to finish your tasty casserole!
