Walking Taco Casserole Recipe
Easy taco casserole recipes are a family favorite. This one builds upon the traditional walking taco and expands it to a sit-down ground pork casserole for the kitchen table.
The layers of seasoned ground pork, beans, cheese and the crunch of the corn chips combine to create a quick and easy dinner perfect for the whole family to enjoy.

Ingredients
- Ground pork
- Onion
- Taco seasoning: Store-bought or try making homemade taco seasoning.
- Water
- Cream cheese
- Diced green chilis
- Tomatillo salsa
- Black beans
- Corn
- Corn chips
- Taco cheese

How to make walking taco casserole
Preheat oven to 375 degrees F and prepare a 4 quart baking dish using cooking spray.
Brown and chop ground pork in a large skillet over medium heat on the stove top.
Drain extra grease and add chopped onions to the skillet. Saute until onions turn translucent, 3-4 minutes.


Stir in taco seasoning and one cup of water. Mix well and continue to stir over medium heat allowing the mixture to thicken.
Next, add salsa, green chilis, cream cheese, rinsed and drained black beans, and corn. Stir, combining the ingredients, and then remove from heat.
Pour two cups of corn chips over the bottom of the prepared baking dish. Layer the ground pork taco mixture evenly over the Fritos.


Sprinkle cheese over the ground pork layer and top with the remaining 2 cups of corn chips.
Cover the dish with aluminum foil and bake for 15 minutes or until the cheese is melted.
Remove foil and bake for additional 5 minutes. Serve immediately and customize with toppings.

Walking taco casserole swaps and substitutions

Here’s a few swaps:
- Instead of black beans use pinto or navy beans
- Swap green chilis and salsa for a can Rotel
- Pepper jack cheese can add extra zip or spice

How to make ahead of time
This Walking Taco Casserole is easy to prepare ahead of time for added convenience. Brown the ground pork, and add taco seasoning and ingredients. Hold off on adding the cheese and corn chips.
Place the taco meat, bean, and corn mixture in an air-tight container and refrigerate for up to two days. When you are ready to bake the casserole, prepare the baking dish and follow the steps of corn chips, meat mixture, cheese, and corn chips.
Add 15 additional minutes to the cooking time for 30 minutes.
Smaller crowd, half the recipe
You can easily adjust this recipe to serve a smaller group. Go down the recipe card and use half the amount listed. For example, the recipe calls for 2 lbs. of ground pork, use 1 lb.
If you cut the ingredients in half, downsize to an 8×8 baking dish.

Instructions
- Preheat oven to 375 degrees F and prepare a 4 quart baking dish using cooking spray.
- Brown and chop ground pork in a large skillet over medium heat on the stove top.
- Drain extra grease and add in chopped onions, saute 3-4 minutes.
- Stir in taco seasoning and one cup of water.
- Add salsa, green chilis, cream cheese, black beans and corn.
- Combine ingredients and remove from heat.
- Cover bottom of baking dish with 2 cups of Fritos corn chips.
- Layer ground pork taco mixture evenly over the corn chips.
- Sprinkle cheese on the ground pork layer and top with the remaining 2 cups Fritos.
- Cover with foil and bake for 15 minutes or until the cheese is melted.
- Remove foil and bake additional 5 minutes. Serve immediately and customize with toppings.
