Sausage and Potato Casserole
Kielbasa sausage is a weeknight favorite. Paired with creamy red potatoes and green beans creates a hearty and satisfying meal.
Sometimes referred to as a smoked sausage or rope sausage, this pre-cooked sausage is a quick way to get dinner from the oven and bring it to the table. Casseroles are a speedy way to create a complete meal in one dish.

Ingredients
- Kielbasa or smoked sausage
- Baby red potatoes
- Green beans
- Olive oil
- Water
- Butter
- Garlic
- Red onion
- Spices: black pepper, salt, smoked paprika, onion powder

- Don’t have fresh green beans on hand? Drain 2- 15 oz. cans of green beans
- Skip the bag and combine all ingredients in one bowl

How to make sausage potato casserole
Preheat oven to 400 degrees F and prepare a 9 x 13 baking dish with non-stick cooking spray.
Rinse baby red potatoes and slice in half using a cutting board and knife. You may want to cut it into smaller pieces if casserole is being served to children. Transfer potatoes into a gallon-size zip lock bag.

Add 1/4 cup olive oil, black pepper, salt, smoked paprika, and onion powder over the potatoes and seal bag securely.
Give the zip lock bag a thorough shake to coat all surfaces of the potato pieces, and set the bag aside.
Pour 1/4 cup water into a large frying pan, add sliced sausage pieces, and cook over medium heat. When the sausages reach a slightly browned exterior, most of the water will be evaporated.


Move the cooked sausage into a bowl and combine it with the seasoned potatoes from the bag.
Using the same frying pan, melt 1/4 cup of butter and add in chopped onion and garlic. Saute until onions become translucent.
Combine the onion mixture with the sausage and potatoes and incorporate the green beans. Mix gently to allow spices to cover all the ingredients.

Transfer to the 9×13 baking dish and cover with aluminum foil. Bake for 45 minutes or until potatoes are tender.
Carefully remove casserole from the oven and top with fresh parsley if desired.

What is the best sausage to use for sausage and potato casserole?
We are big fans of all types of pork sausage, but we suggest using Kielbasa sausage or smoked sausage for this specific recipe. Kielbasa sausage adds a rich, smokey flavor to the casserole and is also easy prepare.
Quick substitutions and easy steps
When thinking of a casserole, time saving comes to mind, here’s a few examples of ways to reduce prep time for Sausage Green Bean Potato Casserole.
- Skip the ziploc bag, instead add the browned sausage slice, cut potatoes and green beans together in one large bowl. Pour olive oil, stir, add spices, and stir again.
- Canned green beans vs. fresh green beans. Both are healthy options, simply drain two cans of green beans and continue steps of the recipe.
