Busy Day Soup Recipe
We all love an easy soup with ground pork and pasta that cooks in about an hour on the stove. It’s even better when it tastes incredible and creates that cozy feeling we all love.
Ground pork is the star of the stock pot, a few other pantry staples, and the coming in clutch, mixed frozen veggies. Chances are these veggies are chilling in your freezer, grab them out, gather the spices and get started.

Ingredients
- Ground pork
- Chicken broth
- Diced tomatoes
- Frozen mixed vegetables
- Pasta
- Spices: Italian seasoning, garlic powder, onion powder, smoked paprika, salt and pepper

How to make Busy Day Soup
In a large soup pot, brown ground pork over medium heat. Carefully drain off excess grease.

Next, add spices to the soup. Measure out Italian seasoning, garlic powder, onion powder, smoked paprika, salt and pepper. Stir to combine the spices throughout the cooked ground pork in the pot.
Pour 6 cups of chicken broth into the mixture and stir in the can of diced tomatoes, including the juice.

Slowly bring to a boil and then reduce heat to a simmer. Place the lid on the stock pot and cook for one hour. Stir often.
After the hour of cooking, add uncooked pasta and frozen vegetables to the soup and stir. Continue to cook over medium heat for 15 minutes.
Stir the soup, taste with a spoon, and adjust the seasoning with more salt and pepper as needed. Serve warm and top with parmesan cheese and parsley garnish.

Toppings
While this soup packs a punch of flavors, you can always pile on toppings! We suggest trying parmesan cheese and fresh parsley. Soak up the broth with a dinner roll or sprinkle your favorite crackers over the soup.
Storing
Place extra soup in an airtight container and cool for 20 minutes before sealing and refrigerating. Leftovers will remain food-safe in the refrigerator for 3-5 days.

- 1 ½ lb. ground pork
- 1 Tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
- 6 cups chicken broth low sodium
- 1 -28 oz. can diced tomatoes with juice
- 2 cups frozen mixed vegetables
- 1 cup uncooked mini pasta
- Fresh parsley chopped, for garnish
- Parmesan cheese for garnish
Instructions
- Brown ground pork in a large soup pot, drain grease.
- Add Italian seasoning, garlic powder, onion powder, smoked paprika, salt and pepper. Stir to combine.
- Pour 6 cups of chicken broth into seasoned ground pork mixture.
- Stir in one can of diced tomatoes including the juice.
- Bring to a boil, reduce to a simmer. Place the lid on pot and cook for one hour. Stir often.
- Add 1 cup of uncooked pasta and 2 cups frozen vegetables, stir.
- Cook over medium heat for 15 minutes. Stir soup, taste with a spoon and adjust seasoning as desired.
- Serve warm. Top with parmesan cheese and parsley garnish.
